Detroit-Style Hot Honey Pizza
Cheese pushed all the way to the pan edge so it fries against the metal into a crust you can hear. Sauce in stripes over the top, not under, and Mike's Hot Honey the second it leaves the oven. Butter the sides of the pan properly or none of this works.
Ingredients
- 1/2 tsp Instant Dry Yeast
- 3/4 cup & 2 tbsp of Water
- 2 cups & 3 tbsp All Purpose Flour
- 3/4 tsp Salt
- Butter or shortening
- White cheddar cheese, grated
- Mozzarella cheese, grated
- Whole peeled tomatoes, blended
- Pizza toppings of your choice
- Mike's Hot Honey

Dissolve the salt in warm water, then mix with the flour and yeast until shaggy. Knead 8 minutes until soft but not sticky. Cover and let rest for 20 minutes.

Press the dough into a well-buttered pan. Make sure the sides are buttered too. Cover and let rise 2.5-3 hours until puffy, popping any large bubbles. Preheat the oven to 475°F for at least 30 minutes, with a rack in the lower third.

Arrange mozzarella down the middle of the dough and white cheddar around the edges, touching the pan sides.

Spoon stripes of sauce over the cheese and add the desired toppings.

Bake for about 15 minutes, until the edges are dark brown, the cheese is bubbly, the bottom is crispy, and the toppings are slightly charred.

Remove from the oven, drizzle generously with Mike's Hot Honey, and let rest 5 minutes before cutting.
