Ingredients
- 4 slices Mike's Hot Honey-Smithfield bacon
- 2 large eggs
- 2 slices American cheese
- 1 everything bagel, halved
- Salt and freshly ground pepper
- 1 tablespoon butter
Instructions
Bacon Prep (15-20 minutes)
- Get Started: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Arrange bacon on sheet.
- Cook It Up: Cook bacon for 15-20 minutes or until desired crispiness. Transfer bacon to a plate lined with paper towel to drain.
The Eggs (5 minutes)
- Whisk Away: In a small bowl, whisk eggs until well beaten. Season with salt and pepper.
- Scramble Time: Melt butter in a skillet over medium heat. When butter starts to foam, gently pour in eggs. Cook eggs for 10 seconds, then use a rubber spatula to move eggs across pan to form curds. Continue cooking, folding and stirring every few seconds.
- Add the Cheese: Turn off heat. Add slices of cheese to eggs. When cheese starts to melt, transfer eggs to a plate.
Toast & Assemble (2 minutes)
- Toast That Bagel: Add bagel to skillet. Toast over medium-high heat for 2 minutes until golden brown. Remove from skillet.
- Build It: To assemble, place eggs on bottom bagel half, top with bacon and a drizzle of Mike's Hot Honey.
