Cucumber Melon Margarita

- 3 oz reposado tequila
- 2 oz honeydew melon infused simple syrup
- 1/2 cucumber
- 1/2 oz Grand Marnier liqueur
- 1 ½ oz fresh lime juice
To make the Honeydew Melon infused simple syrup, start by simmering half a cup of water with half a cup of Mike’s Hot Honey. Allow to cool.
Add 2 cups of cubed honeydew to a mason jar. Add 1 cup of the room temperature syrup from the previous step and leave to infuse for up to 4 hours. Strain.
To make the cocktails, peel and chop half a cucumber. Add to a cocktail shaker and muddle gently.
Add remaining ingredients with ice, and shake for 30 seconds before straining into 2 glasses filled with fresh ice.
Garnish with extra cucumber slices and a wedge of lime.
