Summer Ricotta Toasts
A board, not a recipe. Room-temperature ricotta on mini toasts, then cucumber, cherry tomatoes, salami and whatever herbs are still alive in the fridge. Mike's Hot Honey over the lot right before they hit the table.
Ingredients
- Mini toasts
- Ricotta cheese
- Cucumbers
- Cherry tomatoes
- Salami, sliced
- Fresh herbs (basil, mint, etc.)
- Mike's Hot Honey

Let the ricotta come to room temperature. Thinly slice the cucumbers, halve the cherry tomatoes, and chop the fresh herbs.

Spread a generous layer of ricotta over each mini toast.

Top with cucumber, cherry tomatoes, salami, and fresh herbs.

Finish with a drizzle of Mike's Hot Honey and serve immediately.
