Pea & Feta Toasts with Hot Honey

- 10oz frozen peas
- 1 tbsp olive oil
- 1 clove of garlic
- 2 tbsp chopped mint, plus a few extra leaves, torn
- Zest and juice ½ lemon
- 15 slices cut from a fresh baguette, toasted lightly
- 3oz feta cheese, crumbled
- 2 tbsp Mike’s Hot Honey, plus more for drizzling
Defrost peas and mince the clove of garlic. Combine in a bowl and add the chopped mint, olive oil, Mike's Hot Honey, lemon juice and zest and season well.
Mash pea mixture with a potato masher. Divide between the toasts, then scatter a little feta on top of each with some fresh cracked pepper. Arrange on a plate, scatter with more mint leaves and drizzle generously with Mike’s Hot Honey before serving.
