Pea & Feta Toasts with Hot Honey

  • 10oz frozen peas
  • 1 tbsp olive oil
  • 1 clove of garlic
  • 2 tbsp chopped mint, plus a few extra leaves, torn
  • Zest and juice ½ lemon
  • 15 slices cut from a fresh baguette, toasted lightly
  • 3oz feta cheese, crumbled
  • 2 tbsp Mike’s Hot Honey, plus more for drizzling

Defrost peas and mince the clove of garlic. Combine in a bowl and add the chopped mint, olive oil, Mike's Hot Honey, lemon juice and zest and season well.

Mash pea mixture with a potato masher. Divide between the toasts, then scatter a little feta on top of each with some fresh cracked pepper. Arrange on a plate, scatter with more mint leaves and drizzle generously with Mike’s Hot Honey before serving.
