The wealth of culinary knowledge shared online has taken home cooking to new heights and pizza is no exception. In our quest to make great pizza in a standard home oven we came across the Baking Steel, a new pizza making tool from the mind of Andris Lagsdin.
Lagsdin's Baking Steel is a slab of steel, 1/4 of an inch thick, that serves the same function as a standard baking stone, only it conducts heat much better than stone and gives the home pizza enthusiast a new surface that can be used to create beautifully crispy, thin crust pies.
We visited Andris at Baking Steel's test kitchen in Cohasset, MA where he holds weekly pizza-making classes, to make some pies on the Baking Steel with the man himself. The results blew us away and we spent the afternoon making, eating and talking pizza and Baking Steel tricks (including how to make great ice cream on the Steel!).
